Goose or duck ? Why choose one or the other ? Eclecticism does not mean exclusion. When tasting duck foie gras, you clearly notice a very even flavour together wigh a stronger taste, reminiscent of game birds. The taste of goose foie gras is subtler, more complex, with a very delicate and more persistent flavour.
