We are very pleased to show you our home-made specialities direct from our ‘Etape Gourmande’ in the heart of the Pays Basque, in South West of France. We use recipes which have been passed down to us by our ancestors and which we have continued over 4 generations. To whet your appetite why not discover some of our specialities such as Bayonne Ham, or porc MANEX Basque style, foie gras, épaule d’agneau confit (shoulder of lamb conserve), confit de canard ou porc (duck or pork conserve), Axoa (a savoury veal dish), pre-cooked meals, without forgetting our sauce basque Sakari and our home-made pimento based seasonings, as well as our aperitif drink made from sweet pimentos, the famous ‘Biper Amoa’ ?
